Description
This Tomatin was from the independent bottler Malts of Scotland, a 15 year old Highland malt from 2011, drawn from cask MoS 26024 and bottled at 47.5%. The outturn was 150 bottles. Tomatin is a Highland single malt distilled in the hills south of Inverness, where the distillery was founded in 1897. Today it works twelve stills, having shifted from blend volume to single malt.
The spirit was distilled slowly for the soft, fruity Tomatin make, building the approachable Tomatin style. A sherry cask wrapped the soft spirit in dried fruit and a nutty depth. Around the mid teens the malt gains a fuller honey and ripe fruit. The slow loss of the angel's share concentrates the fruity, malty core over time. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land.
At a natural 47.5% it is full and fruity. Apple, vanilla and a light spice, and the Oloroso adds figgy fruit and a warm nuttiness. It is gentle and fruity, the soft spirit shining through. A fruity, lightly spiced finish lingers. This is Tomatin, the fruity Highland malt.
