Description
This is a Tomatin, chosen and bottled by Decadent Drinks, aged 10 year old from 2014 and bottled at 53%. The outturn was 285 bottles. Set in the Highland hills south of Inverness, Tomatin has made single malt since 1897. The distillery was founded in 1897 by a local company, taking its name from the village, Gaelic for hill of the juniper.
The spirit was distilled slowly for the soft, fruity Tomatin make, building the approachable Tomatin style. Ex-Sherry wood added a dried fruit richness to the soft make. Still young, the malt is fruity and mellow with a gentle spice. Long, gentle ageing turns the fresh fruit towards honey and soft spice. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land. An old cattle drovers' road ran through Tomatin, and whisky was made here long before the distillery.
At its natural 53% it is concentrated. Apple, vanilla and a light spice, and the Oloroso adds figgy fruit and a warm nuttiness. A baked apple and a gentle spice lift it. It finishes soft, fruity and clean. This is the softer side of the Highlands.
