Oremus, the Vega Sicilia family’s Tokaj estate, makes this Aszú 5 Puttonyos from Furmint and partner grapes on volcanic soils. Botrytised berries give dried apricot, honey and marmalade, held in balance by Tokaji’s high acidity.

Description
Oremus is the Hungarian estate of the Álvarez family of Vega Sicilia, in Tokaj-Hegyalja in the northeast of the country. This Tokaji Aszú 5 Puttonyos is built from Furmint with Hárslevelü, Sárgamuskotály and Zéta, grown on the region's volcanic clay and loess soils at the foot of old hills. The continental climate and the meeting of the Bodrog and Tisza rivers create autumn mists that promote Botrytis cinerea, the noble rot that shrivels the berries and concentrates their sugar and acid. The dried Aszú berries are picked individually, kneaded into a paste and added to a base wine, then macerated and slowly fermented before ageing in barrel in the cool tunnels carved into the rock. The puttonyos number marks the level of Aszú used, setting the wine's high concentration of sweetness. The colour is deep gold. The nose shows dried apricot, honey and orange marmalade with marzipan and a touch of ginger. The palate is lush and concentrated yet driven by Furmint's piercing acidity, which keeps it fresh and long rather than heavy. Serve chilled at around 10C in a small glass.
