Description
From North Star Spirits comes this Tobermory matured to 26 year old from 1995 and bottled at 51%. The outturn was 238 bottles. Made on the Isle of Mull, Tobermory is the unpeated single malt of the island's sole distillery. Ledaig, the old name kept for the peated malt, means safe haven in Gaelic.
It was made in the high reflux stills from unpeated barley, for a fruity, waxy make with a green lift. Maturation came in ex-Bourbon wood, vanilla under the orchard fruit. Beyond twenty years the malt grows deep and waxy, honey, dried fruit and nut over old oak. A waxy texture carries the cask flavour across long years. Mull's maritime climate works into the maturing casks over the years. It is one of the oldest commercial distilleries in Scotland still working. Tobermory has distilled in the island's harbour town since 1798. The town of Tobermory was laid out by the British Fisheries Society a decade before the distillery came.
At a hearty 51% it carries real weight. Pear, oily malt and a green note, and the ex-Bourbon lends vanilla and a soft honey. Soft orchard fruit and wax sit behind the cask. It finishes fruity, oily and warming. This is the fruity side of the Isle of Mull's distillery.
