    Jewish Whisky Company selected this Tobermory, a 16 year old island malt from 2008, drawn from cask 192450 and bottled at 55.7%. Only 132 bottles were released. Tobermory is the fruity, unpeated side of the only distillery on the Isle of Mull. The distillery was founded in 1798 by John Sinclair, a local kelp merchant, as the Ledaig distillery.

    The spirit was distilled from unpeated malt in kinked copper stills on soft Mull water, giving the oily, fruity island make. A wine cask shaped it, the fruit meeting the waxy spirit. Mid age brings a deeper honey and a riper, waxy fruit. A patient maturation suits the oily, fruity Tobermory character. The distillery's history is broken by long silences; its buildings once stored a local cheddar. Burn Stewart revived production in 1993, and Distell bought the distillery in 2013. The stills carry boil bulbs and a kink in the lyne arms, which lifts the reflux.

    At a hearty 55.7% it carries real weight. Orchard fruit, wax and a nutty note, and the wine cask lends red berry and a dry spice. A baked apple and a nutty note lift it. The finish is deep, waxy and nutty. This is Tobermory, the unpeated malt of the Isle of Mull.
