A single-variety Trousseau from Stephane Tissot in the Jura, organically and biodynamically farmed at Arbois-Pupillin. Twelve months in 500 litre oak gives a pale, perfumed red of wild strawberry, red currant and rose with a peppery, earthy lift.
Description
Tissot Trousseau Singulier is a monovarietal Trousseau from the Jura, made by Domaine André et Mireille Tissot, run by Bénédicte and Stéphane Tissot and certified organic and biodynamic across its 35 hectares. Trousseau is a thin-skinned local grape that gives pale, aromatic, lightly structured reds. The Arbois-Pupillin vineyards sit on limestone and marl with bands of red and blue clay, a cool, well-drained base that suits the variety and lends a savoury, mineral edge. The cool semi-continental climate and a good diurnal range hold acidity and keep the fruit fresh and perfumed through ripening. Vinification follows the low-intervention path of native yeasts and gentle handling, with ageing for twelve months in 500 litre French oak, a larger format that allows slow oxygen exchange while leaving little overt wood character. The colour is a light translucent ruby. The nose shows wild strawberry, red cherry, red currant and rose, with black pepper and an earthy, herbal turn of thyme. The palate is light and sapid, the tannins fine and the acidity bright, closing fresh and mineral. Serve at 14 to 15 degrees, lightly chilled. Good with roast chicken, pork or charcuterie.
