Description
Domaine André et Mireille Tissot, run by Stéphane Tissot, is one of the leading names of the Jura, in eastern France between Burgundy and Switzerland. This wine is pure Poulsard, a pale, thin skinned local variety, from the Arbois-Pupillin area, farmed organically and biodynamically. The Jura's grey marl and limestone soils and its cool, continental climate suit Poulsard's delicate, aromatic style, giving little colour but plenty of perfume and freshness. The wine spends three months in clay amphorae, vessels that allow a slow, gentle exchange of oxygen without adding any oak flavour, preserving the bright fruit and the chalky, mineral character of the grape while giving a touch of texture. It is pale ruby, almost rosé in depth, with a vivid nose of freshly picked strawberry, redcurrant, rose and dried herbs over an earthy, savoury base. The palate is light bodied and lively, with crunchy red fruit, fresh acidity, very fine tannins and a clean, stony finish. Serve at 13 to 15 degrees, lightly chilled, in a standard glass. It is a versatile food wine for lighter dishes, charcuterie and poultry.
