Description
Domaine André et Mireille Tissot, run by Stéphane Tissot, farms in the AOC Arbois in the Jura, east of Burgundy, working biodynamically across the estate. This DD is a blend of Pinot Noir with the local Poulsard and Trousseau, all light coloured, perfumed Jura reds. The vineyards sit on the marl and limestone soils of the Jura foothills, a cool climate with high rainfall where these thin skinned grapes ripen slowly and keep their delicacy and acidity, holding the wine to around 11 percent alcohol. The wine is natural, organic and vegan, with no additions. It spends twelve months in French oak, where slow oxygen exchange through old wood rounds the texture without adding strong oak flavour. The colour is a pale, translucent ruby. The nose is fragrant, with red berries, cherry, rose and a savoury, earthy undertone. The palate is light bodied and fresh, with very fine tannin, bright acidity and a delicate, herbal finish. This is a wine to serve lightly chilled. Serve at 13 to 14 degrees, with roast chicken, charcuterie or mushroom dishes.
