Description
Tio Pesca Coyote is an ancestral mezcal from the remote town of Sola de Vega in Oaxaca, made from wild Coyote agave, an aromatic and complex maguey of the americana group. Sola de Vega is known for clay pot distillation, and this bottling is the work of maestro mezcalero Fernando Mitra under the Tio Pesca project of the Santa Sabia distillery, which sets out to carry traditional palenques to a wider market.
The agave is cooked in an underground pit oven, crushed by hand with wooden mallets, and fermented in Sabina wood vats before a double distillation in wood fired clay pots, the format that defines the ancestral class and lends a soft, mineral, wet clay character. After distillation the mezcal rests five years in glass, mellowing without wood contact. Roasted agave and citrus peel lead into gentle smoke, floral lift and a soft peppery finish.
