Timorous Beastie 21 Years Old

Timorous Beastie 21 Years Old is a blended malt Scotch from Douglas Laing. It marries single malts from more than one distillery, Dalmore among them. Most expressions are finished in aged sherry wood, giving orange, chocolate and treacle.

Dalmore's full bodied, oily malt adds weight and a dried fruit depth. Maturation in an Oloroso butt laid dried fruit, treacle and dark chocolate over the oily malt. The slow loss of the angel's share concentrates the rich, sherried core over the years. Its spirit stills wear cooling water jackets, condensing the heavier compounds back for a fuller body. Vanillin and oak lactones from the wood lend vanilla and coconut over the rich malt. The rich, oily spirit takes cask flavour superbly, especially aged sherry wood. The thick spirit shows the sherry clearly, dried fruit and orange over a malty depth. The cool Highland air on the firth gives a slow, even maturation.

At 46.8% it is clean and soft. Orange, dried fruit and a dark chocolate richness run through it, full and sherried. The texture is thick and oily, the fruit lifted by a rich sherry. The finish is deep, sherried and dark. A characterful blended malt Scotch.
