Description
Tierra Noble Blanco is a 100% Blue Weber tequila from Jalisco, made by the Herrera brothers at La Estacada in Mazamitla, the highest tequila distillery in the country at around 2,200 metres. It draws agave from two zones, the Valle de Tequila lowlands for aromatic depth and Los Altos for sweeter, more floral notes, a blend that gives the blanco its breadth.
The agave is autoclave cooked, then fermented for up to eight days using a yeast strain more usually employed in winemaking, before a second fermentation and twice distillation in copper pot stills. The nose shows a strong cooked agave presence with herbs, mint and citrus over a light hint of anise. The palate is soft and fresh with raw agave notes and a long, rich, balanced finish. Bottled at 40% and sealed with wax, it is an unaged tequila that keeps both highland sweetness and lowland herbal edge in view.
