Description
Apostolos Thymiopoulos is a Greek winemaker known for his command of the native Xinomavro grape. When he took over the family estate in central Macedonia, he stopped selling the fruit to neighbouring wineries and began making his own elegant, Mediterranean reds. Jeunes Vignes, meaning young vines, is his fresh, early-drinking expression from PDO Naoussa. The region's continental climate, with hot days and cool nights on the slopes of Mount Vermio, lets Xinomavro ripen while keeping the high natural acidity and firm tannin the grape is known for. The young vines and sustainable farming give bright, expressive fruit. This wine is made without oak ageing, a deliberate choice that keeps the focus on the grape's fresh red fruit and floral character rather than wood spice. The colour is bright, pale ruby. The nose shows red cherry and ripe strawberry with a floral, herbal lift. The palate is light to medium bodied, with sharp acidity, a savoury earthiness and the grape's characteristic grippy tannin on a fresh finish. Serve at 14 to 16 degrees, lightly chilled. It is a fine match for tomato-based dishes, roast poultry and pork.
