Thymiopoulos Rosé de Xinomavro 2024

Thymiopoulos Rosé de Xinomavro is made by Apostolos Thymiopoulos in Naoussa, in the Macedonia region of northern Greece. The family has farmed these vineyards for generations, and Apostolos now runs the estate organically and biodynamically, vinifying the fruit himself rather than selling it on. Xinomavro is Naoussa's signature red grape, high in both acidity and tannin, grown here on sandy and clay soils at altitude where cool nights preserve freshness and lift. Made as a rosé, the juice is run off pale and fermented cool in stainless steel to keep the aromatics bright and the colour delicate, with no oak. The wine is a pale salmon pink. The nose is distinctive, with strawberry and cherry alongside the savoury tomato and dried-herb character that marks Xinomavro. The palate is dry and crisp, the red fruit framed by high acidity and a faintly tannic, savoury grip that gives it more structure and length than most rosés, finishing salty and clean. This is a gastronomic rosé built for food. Serve at 9 to 11 degrees. It suits grilled fish, shellfish, tomato dishes and roast poultry.
