Description
Apostolos Thymiopoulos farms in Naoussa, the cool, high country of Greek Macedonia, where the Xinomavro grape is king. This Grande Reserve rose is made from that single variety, grown biodynamically and organically on the region's clay and limestone hillsides. Naoussa's altitude and continental climate give a long, cool growing season and a wide day to night temperature range, which preserves Xinomavro's naturally high acidity and firm structure. The grape behaves more like Nebbiolo than a typical rose variety, with grip and savoury depth rather than simple fruit. The wine spends twelve months in French oak barrels, where slow oxygen exchange builds texture and tertiary complexity, then years of bottle age soften the fruit into a dried, savoury register. The colour has evolved towards a pale coppery pink. The nose is led by dried red berries, cherry, tomato leaf and earth, with herbal and faintly almond notes from age. The palate is dry and structured, with cutting acidity, a savoury, tea like grip and a long mineral finish. This is a gastronomic rose with the development of an old wine. Serve at 11 to 12 degrees.
