The Dead Rabbit was created for the celebrated Irish American bar of the same name in lower Manhattan, in partnership with the team behind The Dublin Liberties, and this event bottling from 2018 carries the First Ireland Spirits imprint. It is a 5 Years Old blend of sourced Irish malt and grain whiskeys, a Dublin whiskey built with a New York bar counter in mind.
The blend matured in used bourbon barrels before time in virgin American oak, an unusual move for Irish whiskey that adds fresh sawn oak, toasted vanilla and a firmer tannic grip to the honey, malt extract and orchard fruit underneath. Bottled at 44%, slightly above standard strength, it was built to hold its own in cocktails at the bar as comfortably as it pours neat.
