Bottled by The Wild Parrot for Sansibar, this South Pacific Distilleries Fiji comes from the 2009 vintage at ten years old, matured in ex-bourbon oak and presented at a forceful 62.3 percent. It is an unsweetened, full-proof single-origin rum aimed at experienced drinkers who seek out aromatic intensity.
Fiji's distinctive funk drives it: fermented, ester-rich tropical fruit and pineapple on the nose, then a salty, smoky palate with roasted nuts and a woody, funky finish. Oily and weighty in the glass, it shares some DNA with young Jamaican pot still while keeping a character all its own. The strength gives it real punch, so it can read sharp until it settles, but for those who love dry, high-ester island rum it is a compelling and characterful cask.
