The Wild Parrot South Pacific 2012 is a single cask of Fijian rum from the South Pacific distillery, bottled at thirteen years old by The Wild Parrot at a natural cask strength 53.8% and declared unsweetened. Fijian rum has earned a following for its distinctive estery character, and this molasses based single barrel leans into it.
Matured in ex bourbon wood, it carries the South Pacific signature, a glue and varnish funk wrapped around ripe fruit and marzipan on the nose. The palate is peppery and bright with an acidic lift, more of that glue and almond paste, while the finish turns to mango, a saline mineral streak and warmth. This is a characterful, funk forward rum that wears its quirks proudly, rewarding those who enjoy high ester island spirits and the full proof intensity that comes with a natural single cask.
