The Wild Geese Irish Vodka Untamed

The Wild Geese is better known for its Irish whiskey, and this vodka borrows some of that distilling thinking. Rather than a single neutral grain spirit, Untamed is built in two parts: Irish apples are fermented and distilled into a fine eau-de-vie in traditional copper pot stills, then blended with the brand's classic grain vodka. Pot stills work slowly and keep more of the fruit's character than a tall column would, which is why a thread of apple survives the cut. The result is a small batch spirit at 40% that carries real flavour without anything added after distillation.

The nose is mild and fresh, with subtle fruit and a fine spice. The palate is soft and clean, with that light apple sweetness and a clear, well-defined structure, and the finish is pure and balanced with a touch of warmth. Because the apple note is genuine rather than synthetic, lean into it: build a tall serve over ice with cloudy pressed apple juice and a squeeze of lemon, topped with soda, so the orchard character in the spirit meets fruit on the same wavelength instead of fighting a sharper mixer.
