Description
The Sadie Family, founded by Eben Sadie in 1999, works in Swartland in South Africa's Coastal Region, a warm, dry district known for old bush vines and granite and schist soils. Palladius is a field-scale blend of eleven white varieties with Chenin Blanc at its centre, drawn from organically farmed old vineyards that yield small crops of concentrated fruit. The poor, well-drained soils and hot, sunny climate produce ripe, textured whites, while cooler coastal influence and old vine depth keep them balanced. The many varieties are fermented and matured in wood, mostly older barrels and larger vessels, then held on the lees for an extended period. That long lees ageing builds body and a savoury, doughy complexity through mannoprotein release, while the seasoned wood adds structure and slow oxygen exchange rather than fresh oak character. The colour is deep gold. The nose is layered, with white peach, pear, honey and beeswax over dried herbs and almond. The palate is full and rounded but firm, with citrus and stony minerality carrying a long, savoury finish. Serve at 11 to 13 degrees in a large glass.
Additional information
Serve with roast chicken, pork or firmer white fish such as monkfish and turbot, where the wine's weight and texture come into play. The savoury depth also flatters mushroom dishes, roasted root vegetables and hard nutty cheeses.
