Description
The Sadie Family Kokerboom is a biodynamic old vine white made from Semillon in the Wine of Origin Swartland, in South Africa's Coastal Region. Eben Sadie founded the estate in 1999 after working in wine regions around the world, and with his brothers farms across the Swartland with minimal intervention. The region is warm and dry, but its old, dryland bush vines and decomposed granite and schist soils give low yields and deep, concentrated fruit with a firm mineral base. Semillon is a textured, waxy grape, and here it is aged twelve months in foudres, the large old wooden casks that shape a wine through slow oxygen exchange without adding oak flavour. That long élevage on the lees builds weight, a fine creamy texture and a savoury complexity while keeping the fruit intact. The wine is deep gold. The nose shows white peach and pear over beeswax, fennel and toast. The palate is broad and layered, with almond and a saline, nutty depth carried by fresh acidity through a long finish. Serve it at 11 to 13 degrees in a large glass.







Additional information
The waxy weight and texture match grilled tuna, monkfish and roast chicken. It has the structure for hard, nutty cheeses and roasted root vegetables. Try it with a saffron fish stew.
