Description
The Ontake Distillery sits in Kagoshima, the warm southern prefecture of Kyushu, and The 1st is the house's inaugural single malt release, bottled in 2023. The NAS expression shows what the distillery set out to achieve from its earliest production, drawing its character from a single maturation regime rather than a complex wood programme.
The liquid spent its time in a First Fill Solera Sherry Butt filled with Oloroso, a richly oxidative wood choice that delivers the bottling's core profile of dried fruit, fresh fruit and honey, framed by a lively citric note that keeps the sherry influence from becoming heavy. At 43% it sits in a gentle, approachable register, and the warm, humid Kagoshima climate will have accelerated the interaction between spirit and wood during its youth.
