Description
This Lindores Abbey single malt matured to 4 year old from 2021, drawn from cask 244006 and bottled at 53%. Just 321 bottles were filled. Lindores Abbey Distillery opened in 2017 beside the abbey ruins where Scotch whisky was first written of in 1494. The 1494 Exchequer Rolls record a Lindores monk, Friar John Cor, making aqua vitae for King James IV, the earliest written reference to Scotch.
Distilled on water from a borehole the monks first dug, building the layered Lindores style. Maturation came in ex-Bourbon wood, with vanilla and a soft fruit. A long fermentation builds the fruit that the casks then frame. The first single malt, MCDXCIV, the Roman numerals for 1494, was released in 2021. The Tironensian abbey was founded in 1191 on the banks of the Tay, and welcomed kings for centuries. Lindores also makes Aqua Vitae, a botanical spirit after the medieval water of life. The whisky is bottled on site at Newburgh to keep transport low.
At a full 53% it is bold and fruity. The ex-Bourbon lends vanilla, orchard fruit and butterscotch. Beneath it run stone fruit, butterscotch and a soft spice. A fruity, gently spiced finish lingers. This is the single malt of Scotch whisky's spiritual home.
