Description
An official Lindores Abbey single malt, a 6 year old release from 2019, drawn from cask 190251 and bottled at 61.5%. The outturn was 50 bottles. Lindores Abbey Distillery, in Fife, stands on the ground named in Scotch whisky's founding document, the 1494 Exchequer Rolls. Lindores also makes Aqua Vitae, a botanical spirit after the kind of drink the monks once distilled.
Distilled from local barley in copper stills on borehole water, giving the orchard fruit and butterscotch of the house style. A bourbon cask held it, keeping the layered fruit to the fore. A young, characterful spirit and a bold cask suit one another here. Michael Jackson wrote that for the whisky lover Lindores is a pilgrimage. The distillery was built in 2017 by Drew and Helen McKenzie Smith, whose family has held the land since 1913. The late Dr Jim Swan shaped the cask policy, with his signature recharred red wine barriques.
At cask strength 61.5% it is muscular. The ex-Bourbon lends vanilla, orchard fruit and butterscotch. It is fruity and bold, the spirit and oak well matched. Orchard fruit and a baking spice see out the finish. This is a layered young single malt from Lindores.
