Description
This official Lindores Abbey single malt matured to 4 year old from 2019, drawn from cask 19/2819 and bottled at 61.7%. Just 382 bottles were filled. Lindores Abbey at Newburgh revived distilling on the site of the earliest recorded Scotch, the 1494 entry for Friar John Cor. The Tironensian abbey was founded in 1191 on the banks of the Tay, and welcomed kings for centuries.
It was worked through copper stills for a layered young spirit, for a layered, fruity spirit, richer than a typical Lowland. A shaved, toasted and recharred red wine cask, Jim Swan's signature, drove red fruit and spice fast. Natural colour and a high strength let the cask character show. The Casks of Lindores range shows the spirit in bourbon, sherry and STR red wine wood. The abbey ruins still stand beside the modern distillery buildings. The bottle shape is drawn from a 12th century pillar found in the abbey ruins. The 1494 Exchequer Rolls record a Lindores monk making aqua vitae for the king, the earliest written reference to Scotch.
Undiluted at 61.7%, it is powerful. The STR red wine cask lends red fruit, chocolate and a baking spice. A baked apple and a warm spice lift it. A fruity, gently spiced finish lingers. This is Lindores Abbey's young Fife whisky.
