The Islay Rum Company The Original Islay Rum {Barrel Aged}

The Islay Rum Company makes rum on Islay using a double retort pot still, the classic heavy aromatic configuration, from a molasses base, then matures it in ex whisky casks for this unsweetened expression at 46%. The location and casks leave a deep mark: the rum is intensely smoky and woody, with peat, smoke and a savoury bacon note dominating throughout.

The whisky influence is so pronounced that at times it reads more like a peated single malt than a rum, with the pot still spirit serving largely as a canvas for the smoke and oak. The palate is smoky and whisky toned yet mild and light underneath, finishing on peat, smoke and bacon. A genuinely unusual crossover bottling for peat lovers and adventurous whisky drinkers, it will reward those chasing smoke, while drinkers seeking classic rum sweetness or funk will find that character largely overtaken.
