Description
Testament is a Croatian winery based in Dalmatia, working with Babić, the area's native red grape, organically farmed across 47 hectares near the coast. The Dalmatian dog of the label is also from this region, which the producer uses as its signature. Babić ripens on the warm, sun-soaked Adriatic coast, where stony soils and sea breezes give wines with ripe fruit, savoury herbs and fresh acidity. This bottling is made for freshness: it spends 6 months in stainless steel, which locks in the bright primary fruit and aromatics, then 6 months in oak barrels to add a measure of structure and spice. The wine is deep ruby with an intense nose of red and black cherry, dark berries, plum and black pepper over dried herbs and a briny, olive-like savoury edge. The palate is fresh and medium-bodied, with bright acidity, fine tannins and an earthy, herbal finish. Serve at 16 to 17 degrees. It pairs well with grilled meats and Mediterranean dishes.
