Il Pino di Biserno comes from Tenuta di Biserno at Bibbona, a coastal pocket of Tuscan Maremma, where Lodovico Antinori works with consultant Michel Rolland. The vineyards sit on gravel and clay soils warmed by Mediterranean sun and tempered by sea breezes, a maritime setting closer in feel to Bordeaux than to inland Tuscany. The 2022 is a blend of Cabernet Franc, Cabernet Sauvignon, Merlot and Petit Verdot, the classic left-bank quartet that ripens well in this warm, well-drained terroir. Fermentation extracts colour and tannin from the thick Cabernet and Petit Verdot skins, and the wine then spends twelve months in oak barrels, where slow oxygen exchange softens the tannins and adds cedar and sweet spice. The result is deep ruby in the glass, with blackberry, redcurrant and plum on the nose lifted by tobacco, graphite and vanilla. The palate is full bodied and structured, the tannins firm but polished, with savoury length on the finish. Serve at 17 degrees Celsius and decant an hour ahead. It suits roast beef, rack of lamb and aged hard cheese.
