Signatory Vintage bottled this Teaninich single malt matured to 13 year old from 2009, drawn from cask 5 and bottled at 56.4%. 677 bottles in all. First built in 1817 north of Inverness at Alness, Teaninich is a big Highland workhorse. The mash filter gives an ultra clear wort, the source of its fragrant, green tea grassiness.
It was drawn off fat copper stills fed by a uniquely clear wort, for a fragrant spirit with a green tea lift. Ex-Sherry wood added a dried fruit richness to the green make. Past a decade the grass deepens, the wax and a soft honey building over green fruit. Long, gentle ageing turns the cut grass towards honey and soft fruit. The Cromarty Firth nearby is one of few UK waters home to bottlenose dolphins. A long fermentation of around 75 hours builds the fresh, fruity notes. Filled spirit is tankered away to mature in Diageo's central warehouses.
At its natural 56.4% it is concentrated. Raisin and a nutty sherry depth build, and a gentle vanilla from the wood runs under a clean, green fruitiness. A green tea and a lemon note lift it. The close is fresh, grass over gentle oak. This is a fresh, oily Highland single malt.
