This is a Teaninich single malt, picked by Morrison Scotch Whisky Distillers, a 10 year old release from 2010 and bottled at 47.5%. Just 247 bottles were filled. Teaninich, a large Highland distillery beside the River Averon at Alness, was opened in 1817 on the Teaninich estate. There are no warehouses on site; the spirit is matured in Diageo's central stores.
Mashed through a mash filter for an ultra clear wort and distilled in fat copper stills, giving the fresh, green spirit at its heart. Ex-Sherry wood added a dried fruit richness to the green make. At this age the spirit is fresh and green, cut grass and citrus to the fore. Fat stills give a waxy texture that carries the cask flavour. By the 1970s Teaninich was already one of the largest distilleries in Scotland. The River Averon runs beside the distillery on its way to the firth.
At 47.5%, undiluted, it is deep and grassy. The Pedro Ximenez lends raisin, date and treacle, and the refill oak lending honey and vanilla runs under green apple, grass and a light honey. Beneath it run cut grass, citrus and a soft wax. Cut grass and citrus draw out the close. This is a fresh, waxy Highland single malt.
