A 14-year Trinidad pot still rum from Ten Cane at 60.4%, made from fresh cane juice and pushing intense cherry, dark berries and liquorice over leather and barrel, with a Caroni-style dirty edge and a long, warm finish.
Description
This That Boutique-y Rum Company bottling is a single cask of Ten Cane, an unusual Trinidad rum distilled in a pot still from fresh sugar cane juice rather than the island's more typical molasses and column setup. Aged fourteen years to a full 60.4% and bottled additive-free in the honest Boutique-y style, it is a characterful one-off rather than a mainstream pour.
The cane-juice spirit and pot still combine for a fruity yet slightly dirty profile: barrel, cherry, solvents and leather on the nose, then dark berries, cherry, liquorice and allspice on the palate, with cherry, barrel, berries and wood on the finish. There is an almost confected cherry richness held in check by spicy oak, and a Caroni-style edge to the texture. It rewards time in the glass, a serious, fruit-driven Trinidad rum for drinkers who enjoy that funkier, dirtier register at full strength.
