A single cask Diamond off the Savalle still, bottled by That Boutique-y Rum Company, the Atom Brands label known for honest, additive-free releases. The Savalle is a French metal multi-column still giving the lightest, cleanest end of Guyana's range, and this continentally aged 12 year old shows that gentler character at higher strength.
Maturated from molasses in ex-bourbon wood at 53.9% and aged in cooler European conditions rather than the tropics, it noses light and floral with vanilla, herbs and spice, then delivers vanilla, caramel and brown sugar, finishing on pepper, liquorice, vanilla and cocoa. Unsweetened and bottled at cask strength, it leans easy-drinking and relatively light-bodied, the continental ageing keeping it restrained rather than dense, with a fairly short finish despite the proof. A gentle Guyana column expression for drinkers who prefer the lighter Demerara style and a clean, spicy pour.
