Caroni is the legendary Trinidad distillery that closed in 2003, its rescued casks now the most mythologised in rum. This single cask is a Heavy 23 Year Old Caroni, vintage 1997, bottled by That Boutique-y Rum Company specially for Beija-Flor in Italy. Column-distilled from molasses, matured in ex-bourbon oak and bottled unsweetened at a formidable 63.1%, it represents Caroni's heavy side at full power. The house signature for these heavy marques is an industrial intensity, typically tar, diesel, burnt rubber and machine oil over dark tropical fruit, smoke, brine and deep oak. Expect that savoury, oily, petrol-and-fruit Caroni character at cask strength, a purist's bottling from a finite source.
