Description
This official Talisker single malt, a 10 year old Skye malt from 2009, drawn from cask TD-S: 5VH and bottled at 45.8%. Set on the storm battered coast of Skye, Talisker has distilled since 1830. Medium peated malt from Glen Ord gives the smoke, around eighteen to twenty two parts per million.
Distilled on Hawk Hill water through worm tub condensers, building the bold maritime style Talisker is loved for. Maturation in Oloroso sherry laid smoked dried fruit over the peat. Younger here, it keeps a fierce peat and a clear chilli kick. The rich, oily make carries cask flavour while holding its peppery edge. After a stillhouse fire in 1960, the five stills were rebuilt as exact replicas. The distillery faces the water across to the hills of Skye. Talisker is made by the sea, and matured within reach of the salt air. The signature is a black pepper kick, the so called chilli catch, over maritime smoke.
At an easy 45.8% it is gentle and briny. The Oloroso brings smoked dried fruit and a nutty depth, and smoke, salt and a warming pepper, with a touch of vanilla and oak sweetness. Soft smoke and brine sit behind the cask sweetness. The close is long, smoke over a chilli warmth. This is a smoky, peppery Island whisky.
