Description
This Talisker, an official release, a 10 year old from 2007, drawn from cask TD-S: 5TF and bottled at 45.8%. Talisker, first built in 1830 on the Minginish peninsula of Skye, is a Diageo Classic Malt. Talisker distilled three times until 1928, which is why it keeps two wash stills and three spirit stills.
The spirit was run through the unusual two and three still set up and cooled in worm tubs, for the rich, oily, peppery make at its heart. Ex-Sherry wood added a dried fruit richness to the smoky spirit. Still young, the malt is smoky and peppery with a coastal punch. The U shaped lyne arms add reflux and an oily refinement to the spirit. Its 10 year old is the Island malt of Diageo's Classic Malts selection. The unusual two wash and three spirit still set up is a relic of triple distillation, dropped in 1928.
At 45.8% it is soft, smoky and coastal. The Oloroso brings smoked dried fruit and a nutty depth, and soft vanilla and honey from the cask, while brine, citrus and a smoky pepper lead. It is bold and coastal, the peat and pepper to the fore. The finish runs oily, smoky and warm. This is a bold Island single malt from Carbost.
