Description
A distillery bottling of Talisker, a 30 year old and bottled at 45.8%. The outturn was 3186 bottles. Talisker, first built in 1830 at Carbost on the Isle of Skye, is a Diageo Classic Malt. Its 10 year old was chosen as the Island malt of Diageo's Classic Malts series.
The spirit was made in tall pot stills with purifier loops and worm tubs, from medium peated malt, for a smoky, oily, peppery spirit. It rested in ex-Bourbon oak, the wood adding a light sweetness under the peat. At this great age the smoke is gentle and the malt waxy, the pepper a warm memory. Long ageing turns the smoke gentle while the pepper lingers. Its 10 year old is the Island malt of Diageo's Classic Malts selection. The unusual two wash and three spirit still set up is a relic of triple distillation, dropped in 1928. An old visitors book records guests calling since the turn of the last century.
At an approachable 45.8% it is balanced. A coastal peat smoke and a peppery lift ride over light oak sweetness beneath the peat. The texture is oily and full, the smoke threaded with salt. The finish is deep, oily and peppery. This is Talisker's smoky, peppery Skye style.
