A distillery bottling of Talisker, a 30 year old Skye malt from 1976 and bottled at 51.9%. A release of 3000 bottles. Set at Carbost on the Isle of Skye, Talisker has distilled since 1830. Water comes from the Cnoc nan Speireag, the Hawk Hill, springs above the distillery.
The spirit was made in tall pot stills with purifier loops and worm tubs, from medium peated malt, for a smoky, oily, peppery spirit. An Oloroso sherry cask wrapped the smoke in dried fruit and a nutty depth. At this great age the smoke is gentle and the malt waxy, the pepper a warm memory. Long ageing turns the smoke gentle while the pepper lingers. Talisker is made by the sea, and matured within reach of the salt air. The signature is a black pepper kick, the so called chilli catch, over maritime smoke. Founded by the MacAskill brothers in 1830, it is Skye's oldest distillery.
Undiluted at 51.9%, it is deep and smoky. The Oloroso brings smoked dried fruit and a nutty depth, and sea brine, smoke and a black pepper kick ride over light oak sweetness beneath the peat. The mouthfeel is oily, the smoke carried on a peppery body. A long, warming, peppery finish lingers. This is Skye's famous peppery single malt.
