Bodegas Tábula makes this Ribera del Duero red from old vine Tempranillo over 30 years of age on clay limestone soils. Sixteen months in French oak give a deep, structured wine with dark cherry, plum and oak spice.
Description
Tábula is a varietal Tempranillo from Bodegas Tábula in Ribera del Duero, drawn from old vines of more than 30 years grown on clay limestone soils. The low yields of these mature vines concentrate the fruit, while the clay limestone holds water and lends structure and a savoury depth. Ribera del Duero sits high on the northern meseta, where a continental climate and a wide diurnal range slow ripening and preserve the acidity that keeps the wine fresh beneath its weight. Fruit is hand harvested into small 15 kilo boxes and selected on a sorting table before vinification. The wine is aged sixteen months in French oak, where slow oxygen exchange firms the tannins and adds cedar, vanilla and a fine toast. It is deep ruby with a violet edge. The nose shows dark cherry, plum and dark berry fruit over oak spice and liquorice. The palate is full bodied and structured, the tannins firm but ripe, with a long finish. Serve at 17 degrees and decant ahead. It suits roast lamb, beef and hard cheese.
