Description
This Plantation single cask takes Trinidad Distillers Limited rum, the light, column still Angostura distillate, and finishes it in a Chardonnay cask from Chablis, a Maison Ferrand bottling that is double aged and sweetened. Distilled in 2008, aged thirteen years and bottled at 49.6%, the wine cask angle is its signature.
The Chablis influence adds a vinous, sappy edge to the underlying TDL character, with vanilla, oak and spice on the nose giving way to dried fruit and wood on the palate. The finish turns sweet with a chocolate note. Honest to say the dosage softens and sweetens the profile, so this sits as a rounded, wine accented sipper rather than a dry one. The full strength proof gives it some backbone, while the white wine finishing lends a distinctive, fruity twist to a light Trinidad base.
