Description
Candio is a single-vineyard red from Suertes del Marques in D.O. Valle de la Orotava on Tenerife, in the Canary Islands. It comes from El Barranco, a northwest-facing plot at 430 to 500 metres planted with 120-year-old Listan Negro vines trained on the island's distinctive multiple cordon system. The vines grow ungrafted on free-draining volcanic soils, which along with the Atlantic influence and cool nights give the wine its mineral, savoury character and bright acidity. Grapes are partly destemmed and gently crushed, then fermented in open concrete vats with 80 percent whole bunch, a method that adds aromatic lift, fine tannin and a peppery edge. Ageing takes place over 16 months in foudres, large old casks that allow slow oxygen exchange without adding oak flavour, preserving freshness and detail. The wine is medium ruby, with red berries, cherry and white flowers over black pepper, smoke, dried thyme and a stony, earthy depth. The palate is light to medium, with crisp acidity, fine tannin and a long, mineral finish. Serve at 14 to 16 degrees, with roast duck, grilled chicken or mushroom dishes.
