Description
St. Nicholas Abbey is the boutique Barbados estate that revived rum in 2006, and its older bottlings draw on spirit distilled at Foursquare and matured on the Abbey grounds. This twenty three year old single cask follows that pattern, a long-aged Bajan rum bottled unsweetened at 40%.
The molasses distillate carries the island's pot and column character, and more than two decades in a single ex-bourbon cask under tropical maturation have built real depth. Spicy cinnamon, vanilla and fudge lead the nose, while the palate turns to peaches, orange and dried fruit before a velvety finish dusted with nutmeg and cinnamon. Free of additives and held at a soft strength, it lets clean distillate and long age do the work, a refined, low-volume estate release that rewards slow sipping over any added sweetness.
