Description
St Nicholas Abbey is the boutique estate of Barbados, a historic great house where rum was revived in 2006. Unusually for the island, it is made from cane syrup rather than molasses, crushed on a restored steam mill and distilled on a pot and column setup. This single cask is aged eight years and bottled at 40%.
Matured in ex-bourbon oak, the cane syrup base gives a slightly different accent: ginger and pineapple lead, with vanilla and a grapefruit brightness running through. The palate keeps that fresh, fruity character before a finish that turns sweet, oaky and balanced. Bottled without added sugar as an authentic, island aged estate rum, it shows a lighter, more delicate side of Barbados, low in volume and made with the estate's own cane rather than bought in distillate.
