Description
St Nicholas Abbey is the boutique Barbados estate built around a 1658 Jacobean great house, with rum revived in 2006. Unusually for the island it works from cane syrup rather than molasses, crushed on a restored steam mill, then distilled on a pot and column still and aged in ex-bourbon oak, all bottled on the estate at low volume.
That cane-syrup base gives this five year old its character: a grassy, elegant nose with caramel and apricot, then cream toffee, banana and a creamy, peppery palate, finishing on cedar wood, custard and a touch of sharpness. The grassy edge sets it apart from the usual molasses-based Bajan profile, and it stays refined and unsweetened despite the modest strength. Best neat or with a splash of water, this is a polished, low-proof introduction to the estate's own distillate, characterful if understated for its age.
