Description
Spy Valley was established in 1993 by the Johnson family in the Waihopai Valley, in the heart of Marlborough at the northern end of the South Island. Marlborough made its name on Sauvignon Blanc, and the region's free-draining stony river soils, high sunshine and cool nights give the grape its trademark mix of ripe fruit and bright, cutting acidity. This wine is aged on its lees, the spent yeast cells left in contact with the wine after fermentation, which adds a fine texture and a savoury breadth while keeping the pungent, aromatic Sauvignon fruit fresh. There is no oak, so the varietal character and minerality stay clear. It is pale straw with green glints. The nose is lifted and aromatic, with lemon, green apple and elderflower over white peach and citrus peel, and the palate is crisp and dry, the fruit driven by a zesty, faintly saline acidity that runs into a clean, tangy finish. Serve well chilled at 8 to 10 degrees in a white wine glass.
