Description
Springfield Estate is a family winery in Robertson, in the Western Cape, run by descendants of French settlers who left the Loire in 1688. This Sauvignon Blanc takes its name from the stony vineyard it comes from, where the vines are planted on hard, rock-rich soils. Poor, stony ground of this kind forces the vines to work and yields small, concentrated berries, and the free-draining rock lends a distinctly mineral, saline character. Robertson's warm days are tempered by cool air drawn up the valley, and this swing between day and night preserves the bright acidity and green aromatics that define the grape. The wine is aged on its lees, which adds a fine textural weight and a subtle savoury note without the use of oak, keeping the fruit clean and direct. The colour is pale with green tints. The nose is sharp and fresh, with lemon, green apple, citrus peel and white flowers over a stony, herbal edge. The palate is dry and racy, with high acidity, a saline grip and a long, mineral finish. Serve well chilled at 8 to 10 degrees.
