Caroni is the legendary Trinidad distillery that closed in 2003, its rescued casks now the most mythologised in rum. This single cask is a Heavy 20 Year Old Caroni, vintage 1997, bottled by Spirits Shop Selection for a bar show in Taipei. Drawn from Trinidadian molasses, matured in ex-bourbon oak and bottled at cask strength, 59.6%, it represents Caroni's heavy side at full power. The house signature for these heavy marques is an industrial intensity, typically tar, diesel, burnt rubber and machine oil over dark tropical fruit, smoke, brine and deep oak. Expect that savoury, oily, petrol-and-fruit Caroni character, a purist's bottling from a finite source.
