Speyside Distillery 2015 DMor (Dràm Mòr)

Bottled by Dràm Mòr, this Speyside Distillery single malt matured to 6 year old from 2015, drawn from cask 2825 and bottled at 53.5%. The outturn was 271 bottles. The Speyside Distillery, hand built over two decades by the stonemason Alex Fairlie in the Cairngorm foothills near Kingussie, is the source of the SPEY malts. George Christie bought the land in 1956 and had a stonemason raise the distillery by hand over the years that followed.

The spirit was run slow through small copper stills for a light, fruity spirit, to build a fresh, orchard fruit character. A Tawny Port cask gave a raisined, red fruit depth. Younger here, it keeps a clean, floral freshness over light honey. A long fermentation and slow distillation in the short stills are managed by hand to keep the spirit light and fruity.

At a natural 53.5% it is full and fruity. The Port cask adds plum, red berry and raisin, and orchard fruit and a floral lift sit alongside a quiet vanilla from the refill oak. A ripe pear and a gentle spice lift it. A fruity, gently spiced finish lingers. This is the fresh Speyside style of the SPEY range.
