This is a Speyside Distillery single malt, chosen and bottled by Uncharted Whisky Co, a 10 year old from 2014, drawn from cask UC044 and bottled at 50%. Just 600 bottles were filled. Hand built near Kingussie and first run in 1990 near Kingussie in the upper Spey valley, the Speyside Distillery is one of Scotland's smallest. It is the most southerly of the Speyside distilleries, nearest of all to the source of the Spey.
It was worked slowly through short stills to keep the spirit light, for the light, fruity Speyside make the distillery is known for. Ex-Sherry wood added a dried fruit richness to the make. Around ten to fifteen years the malt gains a fuller honey over the fruit. Maturation in the Highland air gives a clean, unhurried development. The SPEY range and the dark Beinn Dubh are bottled by Harvey's of Edinburgh. Short stills and slow, hands on distillation coax a light, fruity spirit.
At its natural 50% it is concentrated. The Oloroso brings dried fruit, fig and a nutty depth, and a light, fruity sweetness meet honeyed oak sweetness underneath. Beneath it run apple, honey and a soft spice. It finishes clean, fresh and fruity. This is a light, fruity Speyside single malt.
