Description
Single malt from the Speyside Distillery, an independent Feinkost Reifferscheid bottling, a 23 year old Speyside malt from 1991, drawn from cask 943 and bottled at 60.8%. 68 bottles in all. The Speyside Distillery was hand built over two decades by the stonemason Alex Fairlie in the Cairngorm foothills near Kingussie; it is one of the smallest and most picturesque distilleries in Scotland. The SPEY range and the dark Beinn Dubh are bottled by Harvey's of Edinburgh.
The spirit was run slow through small copper stills for a light, fruity spirit, to build a fresh, orchard fruit character. Maturation in a sherry cask laid dried fruit over the light malt. Past sixteen years the spirit turns rich and honeyed while keeping its finesse. The light, fragrant make takes cask character readily across maturation.
At its natural 60.8% it is concentrated. The Oloroso brings dried fruit, fig and a nutty depth, and fragrant honey and ripe fruit meet a quiet vanilla from the refill oak. Soft orchard fruit and vanilla sit behind the sweetness. Apple, honey and oak draw out the close. This is a gentle, honeyed Speyside malt.
