    An official Speyburn single malt, a 25 year old release and bottled at 46%. Set opposite Glen Grant near Rothes, Speyburn has distilled since 1897. Traditional worm tub condensers are still used, giving a rounded, fragrant make.

    It was drawn off the stills into worm tubs, the old way of condensing, for a light, floral spirit with a worm tub weight. A sherry butt held it, the wood lending raisin and walnut. At this age it is rounded and full, the fruit folded into a honeyed, waxy body. The light, fragrant make takes cask character readily across maturation. The first spirit ran in a December snowstorm in 1897, to date the fillings to the Diamond Jubilee. Water is drawn from the Granty Burn, a clear tributary of the Spey. Inver House runs Speyburn alongside Old Pulteney, Balblair and anCnoc. The name joins the Spey with the Scots word burn, for a Speyside stream.

    Reduced to 46%, it is mellow. The Fino lends a dry, nutty, almond edge, and a gentle vanilla and coconut from the wood runs under a clean, honeyed fruitiness. A dried fruit and a gentle oak spice give it depth. A warming, fruity finish lingers. This is a fruity Speysider from Rothes.
