Description
This Speyside Distillery single malt, an official release, aged 15 year old and bottled at 40%. The Speyside Distillery was hand built near Kingussie and first run in 1990 near Kingussie in the upper Spey valley, and it has made the SPEY and Beinn Dubh malts for the Harvey's family. It is the most southerly of the Speyside distilleries, nearest of all to the source of the Spey.
It was worked slowly through short stills to keep the spirit light, for the light, fruity Speyside make the distillery is known for. A Port cask shaped it, the red fruit meeting the light spirit. Around ten to fifteen years the malt gains a fuller honey over the fruit. Maturation in the Highland air gives a clean, unhurried development. Short stills and slow, hands on distillation coax a light, fruity spirit. The site was a working barley mill from the 1700s until 1965. A long fermentation builds the fruity esters that mark the house style.
Bottled at 40%, it is rounded. The Port cask adds plum, red berry and raisin, and a light, fruity sweetness meet honeyed oak sweetness underneath. Beneath it run apple, honey and a soft spice. It closes long, fruity and honeyed. This is a light, fruity Speyside single malt.
